PIZZA!!!!

There are not many things that taste better overseas than homemade pizza.  Yesterday after I successfully activated instant dry yeast I made pizza dough.  I would not normally brag about things I make overseas because my recipes are ALWAYS adjusted and never taste quite right, but this dough was PERFECT!

Here is my recipe. It is adapted from a recipe my mom had and one I found on Allrecipes.com: Pizza Dough III

-2 1/2 cups white flour (again whole wheat is much better if you have it)
-1 tsp dry instant yeast
-1 cup warm water
-1 tbls sugar
-1 tbls salt
-1 tbls olive oil


Step 1: Activate the yeast (See my previous blog post Yeast Yonkers).  Take 1 cup water and mix in the sugar. Then add the yeast and stir rapidly for 10 seconds.  Wait 10-15 minutes or until the yeast starts to bubble and pour it into a large mixing bowl.  

Step 2: Mix in all the flour while stirring.  Add salt and olive oil gradually until all the ingredients are mixed together. Don't manipulate the dough to much at this point.  The dough should be moist and shiny in appearance.

Step 3: Let it rise in a moist warm spot (like a microwave that is off with the light on). My dough only rose for 45 minutes, but 1-2 hours is preferred.  After this point the dough should been noticeably larger than before.  If not you may have improperly activated the yeast.

Step 4: Preheat your oven to 400'F. Cover your work space and hands in flour, then take it out of the bowl and kneed it a little. Massage in some more flour if the dough is to sticky.

Step 5: Roll out or toss the dough into the size of your pan.  My husband and I enjoy making personal pizzas so we can each have our own toppings. After the dough is in the pan spread an extra tsp. of olive oil onto the dough and then add garlic and oregano seasonings as per your liking.  

Step 6: Cook pizza crust 1/2 way or about 20 minutes then pull it out and add all the toppings.  Put it back into the oven and cook for another 15 or 20 minutes for best results!   

Yesterday we had salami, pinapple, onion and pesto pizza. It was amazing!!!!!
